Mushy Tuna Sandwich

8 slices Gardenia High Fiber Wheat Raisin Loaf
1 can canned tuna
1 can Mushroom
1 pc Tomato, medium, minced
1 pc Onion, white, minced
1 tbsp Canola oil
Spinach leaves, blanched (garnish))
Salt and pepper to taste
1.Toast the Gardenia High Fiber Wheat Raisin Loaf for 2 minutes. Set aside.
2.For the filling, heat the oil in a pan. Sautee white onion and tomato. Adjust seasoning with salt and pepper.
3.Add mushroom and tuna. Reduce the heat and cook for 5 minutes. Remove from heat and place the tuna and mushroom mixture in a plate.
4.To assemble the sandwich, add the tuna and mushroom mixture on toasted Gardenia Whole Wheat Raisin Loaf then place the other slice of the bread on top. Serve.
