Lemon Banana Parfait

2 packs of Gardenia Toasties
1/2 cup of All Purpose Cream
2 pcs. of Banana
Lemon Curd:
2 pcs. of Lemon
3 pcs. of Egg yolk
1/3 cup of Sugar
1 tsp. of Salt
2 tbsp. of Butter, cold


Crush the Gardenia toasties until they are almost fully crushed (having a variety of fully crushed and fine pieces).
Chill the cream, bowl, and whisk that you’ll be using in the refrigerator.
Peel and slice the banana in 1/4″ coin shapes. (adjust slices according to your preferences).
Zest and juice the lemon, set aside.
In a pot, combine lemon juice, zest, egg yolks, sugar, and salt. Mix well before turning on the heat.
Cook on low to medium low for around 5-7 minutes or until the mixture thickens.
Take off the heat and add butter. Mix through well.
Before assembling, whisk the cream using the cold bowl and whisk.
Mix until the cream forms soft peaks (holding the whisk upside down forms a curl).
In a serving cup, place alternating layers of lemon curd, cream, banana, and of course the toasties.
Add layers until the container is full. Finish with either lemon curd or whip cream.
Sprinkle with toasties to give an extra texture, crunch, and color contrast.
Option: Chill before serving.
