Gardenia Shrimp Apple Melt

4 slices Gardenia Wheat Raisin Bread
4 pcs cheese, singles
1 cup shrimp, shell removed, deveined, poached
4 slices red apple
½ cup red onion, sliced, caramelized
½ cup sprouts
Spread cranberry sauce on each slice of raisin bread. Top two slices of bread with cheese, apple, shrimp, caramelized onions, and sprouts. Add another slice of cheese to the whole shabang and finish with the other two remaining slices of bread.
Heat a cast iron skillet over medium high heat. Spray with cooking spray and place sandwiches on skillet. Let cook about 3 minutes per side, until crispy and browning with cheese melting. Flip over and cook for 3 minutes on other side.
