Gardenia Menudillo Bread Cone

1 loaf Wheat Raisin Loaf 400 g
2 tsp mayonnaise

Menudillo Filling:
1/4 kg ground pork
200 ml tomato sauce
1/2 small pc carrots, small cubes
1/2 small pc potato, small cubes
1/2 pc onion
2 cloves garlic
1 tsp sugar
2 tsp cooking oil
Salt & pepper to taste


1. Cook menudillo filling.
a. Saute garlic & onion.
b. Add ground pork, cook until slightly brown.
c. Add salt & pepper to taste.
d. Pour the tomato sauce & simmer until ground pork is tender.
e. Put carrots & potatoes and cook for 5 minutes.
2. Prepare the bread cones.
a. Cut the edges of bread, then flatten using a rolling pin.
b. Cut into two to form a triangular shape.
c. Brush edges of bread with water then form a cone and seal .
d. Bake in an oven toaster for 10 to 12 minutes until crisp.
e. Set aside to cool.
3. Assemble: Pipe mayonnaise inside the cone , place lettuce and menudillo or other leftover ulam.
4. Serve and enjoy.
