Gardenia Hawaiian Chicken Sandwich

4 pcs Gardenia High Fiber Whole Wheat Bread
4 pcs chicken breast fillet
120 ml pineapple juice
120 ml orange juice
60 ml lemon juice
40 g cilantro
220 g pineapple chunks
1 pc red onion
4 pcs cheese singles
60 ml rum
100 g bread crumbs
1 pc large tomato
1 pc Lollo Rossa
salt and pepper to taste


Preheat oven to 150°c(300°F)

Marinate your chicken breast with Pineapple juice, Orange juice, Lemon juice, Cilantro, salt and pepper. Set aside.

To make the Pineapple Salsa, Sauté Red onions and ginger, add Pineapple Chunks or slice. Let it cook for a while. Add rum and reduce the amount of alcohol. Set aside and let it cool.

Dredge your marinated chicken with bread crumbs. Bake it for half an hour or until the thickest part of the chicken is cooked.

To assemble, lightly toast your Gardenia High Fiber Whole Wheat Bread. Place your Lollo Rossa and Tomato on one side of the bread and top it with the chicken breast fillet. Top it with the Pineapple Salsa and cover it with the slice of bread.

Plate and serve.
