Gardenia Chicken Sandwich with Garlic Aioli

4pcs  Gardenia High Fiber Whole Wheat Thick Slice
2pcs Chicken Breast, fillet
2pcs  Egg, White
1/2cup  Spinach, leaves
1/4cup  Cheese, shredded
2pcs Tomato
1 teaspoon Salt
½ teaspoon  Black Pepper

For Garlic Aioli
2 tablespoons Cilantro, leaves
1/4cup Mayonnaise
2pcs  Garlic, cloves
1 teaspoon Salt
½ teaspoon Black Pepper


For Sandwich
Season chicken breast with salt and pepper, then grill  for 3-4 minutes on each side or until cooked. Set aside
On a grill or grill pan, cook chicken for 3-4 minutes on each side. Set aside
In a pan over medium heat, oook egg whites until opaque or cooked through. Set aside.
Pick spinach leaves from the stems.
In a pan over high heat, cook spinach leaves in salt and pepper until it wilts. Set aside.
Slice tomatoes into 1/2-inch slices, set aside

For Garlic Aioli
Mince cilantro leaves and garlic, set aside
Mix all ingredients of Aioli together and cover with plastic wrap.
Set aside to chill for a minimum of 30 minutes.

Slice chicken into 1/2 ” strips, set aside.
Rough chop spinach leaves, set aside.

To assemble from the bottom up, bread, egg white, grilled chicken, grated cheese, tomato slices, spinach, garlic aioli, and bread.
If you prefer, slice the sandwich diagonally and transfer to a serving plate.
