Baked Chicken Parmesan

Ingredients

4 slices of Gardenia Classic White Bread
1 piece of Chicken Breast, fillet
1 tsp. of Salt
1/2 tsp. of Pepper
1/2 tsp. of Thyme
1/4 cup of Flour
1 pc. of Egg
1 can of Tamoto, canned
2 pcs. of Tomato, local
1 tsp. of Tomato paste
1/2 tsp. of Italian Seasoning
6 pcs. of Basil
1/4 cup of Parmesan Cheese

Procedure

Toast 2 slices of Gardenia Classic White Bread until it’s golden brown all around.
Place toasted slices in a bowl and using a rolling pin, crush the bread until it forms breadcrumbs. Set aside
Set up 3 containers, one with flour, salt, pepper, and rosemary. Second with a beaten egg. And third with the homemade breadcrumbs.
Take the chicken and dip in the flour, then eggs, and then breadcrumbs. Set aside
Slice and chop local tomatoes into small pieces, set aside.
Roll up some basil leaves and slice them thinly, set aside.

Once chicken is fully coated, place on a baking pan. Bake for 20-25 minutes or until the chicken is golden brown. Flip the chicken halfway through while the chicken is baking, in a pot add a little oil over medium heat.

Add tomato paste and cook for 2-3 minutes.
Add canned, chopped up tomato, and Italian seasoning. Mix together and continue to cook for a few minutes.
Once tomato sauce is cooked, set aside. Stir in half the cheese while the sauce is still hot but not boiling.

In a oven safe dish, add the slice of toasted bread and a layer of tomato sauce.
Then add the baked chicken on top, add more sauce and add cheese on top.
Broil (bake on high temperature, very quickly) until the cheese melts and browns.
Take out of the oven, serve immediately.
