Satay Chicken Soft Tacos

Ingredients
- 4 pcs of Gardenia High Fiber Whole Wheat Loaf
- 2 pcs of Chicken, thigh
- 2 tbsp of Coriander
- 2 tbsp of Curry Powder
- 2/3 cup of Coconut Milk
- 1 tbsp of Chili Powder
- 1 stalk of Lemongrass
- ½ cup of Peanut Butter
- 2 tbsp of Soy Sauce
- 1 tsp of Lime, juice and zest
- 1 tsp of Salt
- ½ tsp of Pepper
Procedure
- Using a rolling pin, roll the slices of Gardenia High Fiber Whole Wheat Loaf flat. Set aside.
- With the back of a knife smash the end of the lemongrass stalk, set aside.
- In a bowl, mix together curry powder, coconut milk, chili powder, and lemongrass.
- Marinate chicken thighs in the marinade for 30 minutes to an hour in the refrigerator.
- In a bowl, mix together peanut butter, soy sauce, lime juice, lime zest (optional), salt, and pepper. Set aside.
- In a pan over medium heat, cook the marinated chicken thighs on both sides until golden brown. Set aside.
- Once the chicken is slightly cooled, slice into strips.
- To assemble, start with a flattened slice of bread.
- Start with a layer of chicken, then add a generous layer of the peanut sauce.
- Finish with a topping of cilantro.
- Repeat until you have the desired number of soft tacos
- Transfer to a serving plate / platter.
Optional: Serve with lime / lemon wedges and extra peanut sauce.
