Satay Chicken Soft Tacos

Ingredients

  • 4 pcs of Gardenia High Fiber Whole Wheat Loaf
  • 2 pcs of Chicken, thigh
  • 2 tbsp of Coriander
  • 2 tbsp of Curry Powder
  • 2/3 cup of Coconut Milk
  • 1 tbsp of Chili Powder
  • 1 stalk of Lemongrass
  • ½ cup of Peanut Butter
  • 2 tbsp of Soy Sauce
  • 1 tsp of Lime, juice and zest
  • 1 tsp of Salt
  • ½ tsp of Pepper

Procedure

  • Using a rolling pin, roll the slices of Gardenia High Fiber Whole Wheat Loaf flat. Set aside.
  • With the back of a knife smash the end of the lemongrass stalk, set aside.
  • In a bowl, mix together curry powder, coconut milk, chili powder, and lemongrass.
  • Marinate chicken thighs in the marinade for 30 minutes to an hour in the refrigerator.
  • In a bowl, mix together peanut butter, soy sauce, lime juice, lime zest (optional), salt, and pepper. Set aside.
  • In a pan over medium heat, cook the marinated chicken thighs on both sides until golden brown. Set aside.
  • Once the chicken is slightly cooled, slice into strips.
  • To assemble, start with a flattened slice of bread.
  • Start with a layer of chicken, then add a generous layer of the peanut sauce.
  • Finish with a topping of cilantro.
  • Repeat until you have the desired number of soft tacos
  • Transfer to a serving plate / platter.
Optional: Serve with lime / lemon wedges and extra peanut sauce.
