California Raisin Ala Cubana

Ingredients

  • 2 slices of Gardenia California Raisin Loaf
  • 1 tbsp. of Olive Oil
  • 150g of Ground Beef
  • 3 cloves of Garlic
  • 1 pc. of White Onion
  • 2 pcs. of Tomato
  • 1 pc. of Carrot
  • ¼ cup of Green Peas
  • 2 tbsp. of Tomato Paste
  • ¼ cup of Tomato Sauce
  • 2 tsp. of Salt
  • 1 tsp of Pepper
  • 1 pc of Egg

Procedure

  • Wash and dry all produce, set aside.
  • Peel and mince the garlic and onion, set aside.
  • Chop the tomato and carrots into a small dice (pea-sized cubes), set aside.
  • In a dry pan over medium heat, toast the slices of Gardenia California Raisin Loaf. Set aside.
  • Slice diagonally to have two triangle halves, set aside.
  • In a pan with oil over medium high heat, saute garlic and onion for 1-2 minutes until translucent.
  • Add tomato, carrot, and tomato paste, cook for 1-2 more minutes. (To cook off the bitter taste).
  • Add ground beef, salt, and pepper. Cook for 3-4 minutes until the beef is no longer pink.
  • Add green peas and tomato sauce, mix for a few more seconds until the peas are warmed through. Set aside.
  • In a pan with oil, fry an egg until the edges are crispy, set aside.

Optional: If serving for more portions, cut the eggs into strips.
On a plate / platter, start with the toast.
Then add a layer of the cooked meat mixture
Garnish with the egg (or strips)
