Tropical Chicken Sandwich

Ingredients

  • 6 slices Gardenia California Raisin Loaf
  • 1 pc Chicken breast, cooked
  • 1 pc Mango
  • 6 leaves Lettuce
  • 1/4 cup Mayo
  • 2 tbsp Celery
  • 2 tsp Salt
  • 1 tsp Black Pepper

Procedure

  • Wash and dry all produce, set aside.
  • Remove the mango seed and peel the cheeks. Chop into cubes, set aside.
  • Shred the cooked chicken breast into strips. Set aside.
  • Mince the celery, set aside.
  • In a bowl, mix together mayo, celery, salt, and black pepper. Set aside
  • To assemble the sandwich, start with a slice of Gardenia California Raisin Loaf.
  • Add a layer of lettuce, shredded chicken, mango cubes, and mayo mixture.
  • Top with the 2nd slice of Gardenia California Raisin Loaf, repeat the earlier steps to make the desired number of sandwiches.
  • Transfer to a serving plate / platter.
  • Serve and enjoy!
