Ham & Veggie Cups

Ingredients
- 8 slices Gardenia High Fiber Whole Wheat Bread
- 1 pc Eggplant
- 2 pcs Tomato
- 1 pc Zucchini
- 8 leaves Basil
- 2 slices Ham
- 1/2 cup Tomato Sauce
- 1 tbsp Oregano
- 1 tbsp Salt
- 1 tbsp Black Pepper
- 1 tbsp Olive Oil
Procedure
- Wash and dry all produce, set aside.
- Cut the eggplant, tomato, and zucchini into slices. Try to get slices that are similar in size so that they cook at the same time. Set aside
- Heat up the tomato sauce and season with oregano, salt, and pepper. Set aside.
- Shape the slices of Gardenia High Fiber Whole Wheat Bread into a tart shape or any oven safe container.
- Start with ham (trim if needed), then a layer of the tomato sauce, and the slices of alternating vegetables making sure they overlap until the sauce is covered.
- Repeat earlier steps until the desires number of cups are made.
- Finish with a drizzle of olive oil over all the cups.
- Bake at 200C for 15-20 minutes, remove and let cool
- Transfer to a gift box or container and don’t forget to add a gift tag!
- Gift and enjoy!
