Cheesy Veggie Omelette

Ingredients
- 4 slices Gardenia Classic White Bread
- 1/4 cup Malunggay Leaves
- 1/2 pc Carrot, small
- 1/4 cup Cheese
- 2 pcs Egg
- 2.tsp Salt
- 1 tsp Pepper
- 2 tbsp Banana Ketchup
Procedure
- Wash and dry all produce, set aside.
- Pick the malunggay leaves off the stem and set aside.
- Peel and chop the carrots into small cubes, set aside.
- Cut the cheese into small cubes, set aside.
- In a medium bowl, mix together the malunggay leaves, carrot cubes, cheese cubes, egg, salt, and pepper.
- In a pan with butter or oil over medium head, cook the egg mixture for 2-4 minutes or until the bottom is brown.
- Flip and cook the 2nd side for a minute, remove and cook the next batch of egg.
- On a slice of Gardenia Classic White Bread, place a piece of the veggie omelette and add a layer of banana ketchup.
- Top with the second slice of Gardenia Classic White bread.
- Repeat earlier steps until all the sandwiches are assembled.
- Optional: Cut into halves or quarters if desired
- Transfer to a lunchbox or container
- Serve and enjoy!
