BBQ Tofu Sandwich

Ingredients
Ingredients:
- 8 slices Gardenia High Fiber Whole Wheat Bread
- 1 block Tofu
- 1/2 cup Cornstarch
- 2 tbsp Olive Oil
- 1 tsp Salt
- 1/2 tsp Pepper
- 1 pc Avocado
- 1 pc Tomato
- 1/4 cup BBQ Sauce
Creamy Coleslaw
- 1/2 cup Cabbage
- 1/4 cup Cilantro
- 1/4 cup Red Onion
- 1 pc Carrot, medium
- 1/3 cup Mayonnaise
- 1 tbsp Apple Cider Vinegar
- 1 tsp Salt
- 1 tbsp Mustard
Procedure
Procedure:
- Wash, dry, and peel all produce, set aside
- Slice cabbage, cilantro, red onion and carrot into thin strips or matchstick size.
- In a bowl, mix all the chopped veggies together with the rest of the slaw ingredients.
- Mix the veggie slaw together well, set aside in the fridge.
- Cut the tofu into cubes and cover in cornstarch, oil, salt, and pepper.
- Once coated, fry in a pan with oil over medium heat until golden brown on all sides.
- Once cooked, transfer to a paper towel lined plate to remove the excess oil.
- In a bowl, toss the tofu cubes in bbq sauce. Set aside
- Slice the tomato and avocado into thin slices, set aside.
- To assemble the sandwich, start with a slice of Gardenia High Fiber Whole Wheat Bread then add a layer of coleslaw
- Then add slices of tomato and avocado on top.
- Continue with the sauced tofu cubes on top of the tomato and avocado.
- Finish with the second slice of Gardenia High Fiber Whole Wheat Bread.
- Optional: Cut the sandwich to desired shape / size
- Transfer to a serving plate / platter
- Serve and enjoy!
