Ham & Veggie Cups

Ingredients

  • 8 slices Gardenia High Fiber Whole Wheat Bread
  • 1 pc Eggplant
  • 2 pcs Tomato
  • 1 pc Zucchini
  • 8 leaves Basil
  • 2 slices Ham
  • 1/2 cup Tomato Sauce
  • 1 tbsp Oregano
  • 1 tbsp Salt
  • 1 tbsp Black Pepper
  • 1 tbsp Olive Oil

Procedure

  • Wash and dry all produce, set aside.
  • Cut the eggplant, tomato, and zucchini into slices. Try to get slices that are similar in size so that they cook at the same time. Set aside
  • Heat up the tomato sauce and season with oregano, salt, and pepper. Set aside.
  • Shape the slices of Gardenia High Fiber Whole Wheat Bread into a tart shape or any oven safe container.
  • Start with ham (trim if needed), then a layer of the tomato sauce, and the slices of alternating vegetables making sure they overlap until the sauce is covered.
  • Repeat earlier steps until the desires number of cups are made.
  • Finish with a drizzle of olive oil over all the cups.
  • Bake at 200C for 15-20 minutes, remove and let cool
  • Transfer to a gift box or container and don’t forget to add a gift tag!
  • Gift and enjoy!
