Bicol Express Turnover

Ingredients

  • 4 slices Gardenia Wheat Cranberry Loaf
  • 1/2 pc Onion
  • 3 cloves Garlic
  • 200g Pork cubes
  • 1/2 cup Water
  • 1/2 cup Coconut Milk
  • 1-2pcs Green Pepper
  • 1-2 pcs Red Pepper
  • 3pcs String Beans
  • 1 tsp Salt
  • 1/2 tsp Pepper

Procedure

  • Wash, dry, and peel produce items, set aside.
  • Mince onion and garlic, set aside.
  • Trim the ends and cut the string beans into 2″ pieces. Set aside.
  • In a pan with oil over medium heat, add onion and garlic. Cook for 1-2 minutes or until the onions are translucent.
  • Add the pork and cook until both sides are golden color.
  • Next add the coconut milk, water, green pepper, red pepper, salt, and pepper.
  • Bring to a boil over high heat then turn the head down to medium low heat to simmer.
  • Cooked until the pork is tender, time would depend on the size of the pork pieces. (Poke the meat with a fork to see if it’s tender)
  • When the pork is almost ready, add the string beans and cook for a few more minutes until the green beans are cooked.
  • Set aside, while cooling the bicol express cut a circle out of the slices of Gardenia Wheat Cranberry Loaf making sure to maximize the space.
  • Starting with a circle of Gardenia Wheat Cranberry Loaf, add the meat and vegetables in the middle of the circle
  • Lastly add 1 spoonful of sauce over the meat and veggies.
  • To help the two slices stick, brush the outer ring with water.. Cover with a second circle slice.
  • Using a fork press the edges of the circle down “crimp” it to seal.
  • Optional: Toast the turnovers lightly until light brown
  • Transfer to a serving plate / platter
  • Serve and enjoy!
