BBQ Tofu Sandwich

Ingredients

Ingredients:

  • 8 slices Gardenia High Fiber Whole Wheat Bread
  • 1 block Tofu
  • 1/2 cup Cornstarch
  • 2 tbsp Olive Oil
  • 1 tsp Salt
  • 1/2 tsp Pepper
  • 1 pc Avocado
  • 1 pc Tomato
  • 1/4 cup BBQ Sauce

Creamy Coleslaw

  • 1/2 cup Cabbage
  • 1/4 cup Cilantro
  • 1/4 cup Red Onion
  • 1 pc Carrot, medium
  • 1/3 cup Mayonnaise
  • 1 tbsp Apple Cider Vinegar
  • 1 tsp Salt
  • 1 tbsp Mustard

Procedure

Procedure:

  • Wash, dry, and peel all produce, set aside
  • Slice cabbage, cilantro, red onion and carrot into thin strips or matchstick size.
  • In a bowl, mix all the chopped veggies together with the rest of the slaw ingredients.
  • Mix the veggie slaw together well, set aside in the fridge.
  • Cut the tofu into cubes and cover in cornstarch, oil, salt, and pepper.
  • Once coated, fry in a pan with oil over medium heat until golden brown on all sides.
  • Once cooked, transfer to a paper towel lined plate to remove the excess oil.
  • In a bowl, toss the tofu cubes in bbq sauce. Set aside
  • Slice the tomato and avocado into thin slices, set aside.
  • To assemble the sandwich, start with a slice of Gardenia High Fiber Whole Wheat Bread then add a layer of coleslaw
  • Then add slices of tomato and avocado on top.
  • Continue with the sauced tofu cubes on top of the tomato and avocado.
  • Finish with the second slice of Gardenia High Fiber Whole Wheat Bread.
  • Optional: Cut the sandwich to desired shape / size
  • Transfer to a serving plate / platter
  • Serve and enjoy!
