Gardenia Pink Salmon Open Face

Ingredients
| 10 slices |
Gardenia Honey Oat Loaf |
| 1 can (213g) |
pink salmon in can, drained |
| 1/4 cup |
onions, chopped |
| 1/3 cup |
canned pimiento, drained & chopped |
| 1 Tbsp |
lemon juice (optional) |
| 1 Tbsp |
vegetable oil |
| |
pinch of salt and pepper |
| 1/3 cup |
cup parsley, chopped |
| 1 cup |
easy to melt cheese, grated |
| 1/2 cup |
mayonnaise |
Procedure
- Heat oil in pan. Cook onions, pink salmon and pimiento for a few minutes. Season with salt and pepper. Add lemon juice. Cool the mixture.
- Combine parsley and salmon mixture in a small bowl. Set aside.
- Spread about half tablespoon of mayonnaise on one side of bread. Top with salmon mixture and grated cheese.
- Toast the bread for 2-3 minutes or until cheese melts. Cut into quarters. Serve.
