Gardenia Pink Salmon Open Face

Ingredients


10 slices Gardenia Honey Oat Loaf
1 can (213g) pink salmon in can, drained
1/4 cup onions, chopped
1/3 cup canned pimiento, drained & chopped
1 Tbsp lemon juice (optional)
1 Tbsp vegetable oil
  pinch of salt and pepper
1/3 cup cup parsley, chopped
1 cup easy to melt cheese, grated
1/2 cup mayonnaise


Procedure

  1. Heat oil in pan. Cook onions, pink salmon and pimiento for a few minutes. Season with salt and pepper. Add lemon juice. Cool the mixture.
  2. Combine parsley and salmon mixture in a small bowl. Set aside.
  3. Spread about half tablespoon of mayonnaise on one side of bread. Top with salmon mixture and grated cheese.
  4. Toast the bread for 2-3 minutes or until cheese melts. Cut into quarters. Serve.
